Smash burger tacos are the ultimate viral food mashup, combining the crispy, caramelized edges of a classic diner smash burger with the handheld convenience of a soft taco. By pressing seasoned ground beef directly onto a tortilla and searing it hot and fast in a skillet, the meat juices flavor the wrap while creating an irresistible, savory crust. Finished with melty cheese, crisp lettuce, tangy pickles, and a signature secret sauce, these tacos deliver all your favorite classic burger cravings in less than 15 minutes.

Ingredients

For the Burger Tacos:

  • 1 lb ground beef (80/20 blend is best for juiciness)

  • 8 small flour tortillas (fajita or taco size)

  • 8 slices American or cheddar cheese

  • 1 tbsp cooking oil or butter (for the pan)

  • Salt, freshly ground black pepper, and garlic powder (to taste)

For the Burger Sauce:

  • ½ cup mayonnaise

  • 2 tbsp ketchup

  • 1 tbsp yellow mustard

  • 1 tbsp sweet pickle relish

For the Toppings:

  • 1 cup iceberg lettuce, finely shredded

  • ½ cup white onion, finely diced

  • Hamburger dill pickle slices

Instructions

  1. Mix the Burger Sauce: In a small bowl, whisk together the mayonnaise, ketchup, mustard, and sweet pickle relish. Set aside in the refrigerator to let the flavors meld.

  2. Portion the Beef: Divide the ground beef into 8 loosely packed balls (about 2 ounces each). Do not overwork the meat.

  3. Prep the Tortillas: Place a ball of beef in the center of a flour tortilla. Using your fingers or the back of a spoon, press and spread the meat out into a very thin, even layer, making sure it reaches the edges of the tortilla. Season the meat generously with salt, pepper, and garlic powder.

  4. Smash and Sear: Heat a large skillet or griddle over medium-high heat and add a light coating of oil or butter. Place the tortilla meat-side down in the hot pan. Press down firmly with a spatula. Cook for 2 to 3 minutes until the beef develops a deep brown, crispy crust.

  5. Flip and Melt: Flip the tortilla so the meat side is facing up (the tortilla will now be touching the pan). Immediately place a slice of cheese over the hot beef. Cook for another 1 to 2 minutes until the tortilla is golden and toasted, and the cheese is completely melted.

  6. Assemble and Serve: Remove the taco from the skillet and transfer it to a plate. Top with the shredded lettuce, diced onions, pickles, and a generous drizzle of the burger sauce. Fold in half and enjoy immediately!
