Crispy Air Fryer Chicken Thighs are the ultimate low-effort, high-reward dinner. By using bone-in, skin-on thighs, the air fryer circulates high heat to quickly render the fat, leaving you with meat that is incredibly juicy on the inside and skin that cracks like a potato chip. It takes a fraction of the time of oven-baking, makes virtually zero mess, and requires barely any oil.  




Ingredients

The Chicken:

  • 4 bone-in, skin-on chicken thighs (about 1 ½ to 2 lbs total)

  • 1 tbsp olive oil or avocado oil

The Crispy Spice Rub:

  • 1 tsp kosher salt

  • 1 tsp smoked paprika (adds gorgeous color and a hint of smoke)

  • 1 tsp garlic powder

  • 1 tsp onion powder

  • ½ tsp dried oregano or Italian seasoning

  • ½ tsp freshly ground black pepper

Instructions

Remove the chicken thighs from their packaging and use paper towels to pat them completely dry on all sides. Do not skip this step—if the skin is wet, it will steam in the air fryer instead of roasting.

2.Oil and Season:

In a small bowl, mix together the salt, smoked paprika, garlic powder, onion powder, oregano, and black pepper. Drizzle the olive oil over the dry chicken thighs and rub it in. Sprinkle the spice mixture evenly over the chicken, making sure to massage it into the skin and underneath it where possible.

3.Preheat the Air Fryer:Preheating ensures the skin starts crisping the second it hits the basket..

Preheat your air fryer to 400°F (200°C) for about 3–5 minutes.

4.Cook Skin-Side Down First:

Place the seasoned chicken thighs in the hot air fryer basket skin-side down. This allows the fat under the skin to render out slowly. Cook for 10 minutes. Ensure the thighs are in a single layer with a little space between them for air to circulate.

5.Flip and Finish:This is when the real crisping happens..

Use tongs to carefully flip the chicken thighs so they are skin-side up. Cook for another 8–12 minutes, depending on the size of your thighs. The chicken is done when the internal temperature reaches 165°F (74°C) at the thickest part and the skin is deeply golden and blistered.

6.Let It Rest:

Remove the chicken from the air fryer and let it rest on a cutting board or plate for 5 minutes before serving. This allows the juices to redistribute through the meat so they don't pour out when you cut into it.
