Creamy Tuscan Chicken is a one-skillet dinner marvel that tastes like it came straight from a high-end Italian restaurant. It features tender, golden-seared chicken cutlets smothered in a rich garlic-Parmesan cream sauce, studded with sweet, chewy sun-dried tomatoes and fresh baby spinach. The best part? The entire dish comes together in under 30 minutes, making it just as perfect for a busy weeknight as it is for a weekend dinner party.  




Ingredients

The Chicken:

  • 2 large boneless, skinless chicken breasts (sliced in half horizontally to make 4 thinner cutlets)

  • 1 tsp Italian seasoning

  • Salt and freshly ground black pepper (to taste)

  • 1 tbsp olive oil (or oil from the sun-dried tomato jar)

  • 2 tbsp unsalted butter (divided)

The Tuscan Cream Sauce:

  • 4 cloves garlic, finely minced

  • ½ cup sun-dried tomatoes (packed in oil), drained and chopped

  • ½ cup low-sodium chicken broth (or dry white wine, like Pinot Grigio)

  • 1 cup heavy cream (room temperature)

  • ½ cup freshly grated Parmesan cheese

  • 3 cups fresh baby spinach

Instructions

 1.Prep and Season the Chicken:Thin cutlets cook faster and more evenly..

Carefully slice the chicken breasts in half horizontally to create four thinner cutlets. Season both sides of the chicken generously with salt, pepper, and the Italian seasoning.

2.Sear the Chicken:

Heat the olive oil and 1 tablespoon of the butter in a large skillet over medium-high heat. Add the chicken cutlets and sear for 4–5 minutes per side until they develop a golden-brown crust and reach an internal temperature of 165°F (74°C). Transfer the chicken to a plate and set it aside.

3.Sauté the Aromatics:Don't wipe the skillet—those brown bits are pure flavor..

Lower the heat to medium. Add the remaining 1 tablespoon of butter to the skillet. Once melted, add the minced garlic and chopped sun-dried tomatoes. Sauté for about 1 minute, stirring constantly so the garlic doesn't burn.

4.Deglaze the Pan:

Pour in the chicken broth (or white wine). Use a wooden spoon to scrape up all the flavorful browned bits stuck to the bottom of the pan. Let the liquid simmer and reduce by half (about 2 minutes).

5.Build the Cream Sauce:

Reduce the heat to medium-low. Slowly pour in the heavy cream, followed by the grated Parmesan cheese. Stir constantly and let the sauce come to a gentle simmer. Continue to cook for 2–3 minutes until the sauce begins to thicken slightly. Keep the heat low to prevent the dairy from curdling or breaking.

6.Wilt the Spinach:

Add the fresh baby spinach to the bubbling sauce. Stir gently for 1–2 minutes until the leaves have just wilted into the sauce.

7.Bring It All Together:

Return the cooked chicken cutlets (and any resting juices on the plate) back into the skillet. Spoon the creamy Tuscan sauce over the top of the chicken and let everything simmer together for 1 minute to heat through before serving.
