A Birria Grilled Cheese is the ultimate way to repurpose leftover birria. It takes the slow-cooked, deeply spiced shredded beef and pairs it with absurdly gooey, melted cheese between two slices of thick, crispy bread. The absolute best part? Brushing the outside of the bread with the fat from the birria consommé so it grills up with a beautiful, savory red crust, and serving it with a hot cup of broth for dipping.   




Ingredients 

This recipe makes 2 large sandwiches and assumes you already have cooked birria meat and consommé (broth).

For the Sandwich:

  • 1 cup leftover cooked birria meat (shredded beef)

  • 1 cup birria consommé (warmed)

  • 4 slices thick-cut bread (sourdough, Texas toast, or a sturdy brioche)

  • 1 ½ cups Oaxaca cheese, Monterey Jack, or low-moisture mozzarella (freshly grated for the best melt)

  • 2 tbsp butter (softened)

For the Authentic Crunch (Optional but Highly Recommended):

  • ¼ cup white onion, finely diced

  • 2 tbsp fresh cilantro, finely chopped

Instructions

 1.Warm the Meat and Broth:

Heat your leftover birria meat and consommé in the microwave or on the stovetop until warm. If the meat is cold, it will prevent the cheese from melting properly inside the sandwich.

2.Prep the Bread:

Butter one side of all four slices of bread. This ensures a golden, crispy foundation before we add the signature birria flavor.

3.Assemble the Sandwiches:

Place two slices of bread, butter-side down, on a cutting board. Layer a generous amount of grated cheese onto the bread. Top with the warm shredded birria meat, and sprinkle with the diced onion and cilantro. Top with the remaining cheese (this acts as glue for the top bread slice) and place the final piece of bread on top, butter-side up.

4.Grill and Melt:Use a lid to trap the steam..

Heat a large skillet or griddle over medium-low heat. Place the sandwiches in the skillet. Cook for 3–4 minutes until the bottom is golden brown and crispy. Tip: Cover the skillet with a lid during this stage—the trapped heat helps melt the cheese evenly without burning the bread.

Just before flipping, use a pastry brush (or a spoon) to lightly coat the top (butter-side up) slice of bread with the red fat/oil floating at the top of your warm consommé. Carefully flip the sandwiches.

6.Finish Grilling:

Brush the newly exposed, toasted top side with a little more consommé fat. Cook the sandwiches for another 3–4 minutes until the bottom is deeply browned, slightly red, and the cheese is completely melted and oozing.
