  • 1 ¼ lbs steak (sirloin, New York strip, or ribeye work best), cut into 1-inch cubes

  • 1 tbsp olive oil or avocado oil (an oil with a high smoke point)

  • Kosher salt and freshly ground black pepper (to taste)

  • 3 tbsp unsalted butter

  • 4 cloves garlic, finely minced

  • 1 tsp fresh thyme or rosemary, finely chopped (optional, but highly recommended)

  • 1 tbsp fresh parsley, finely chopped (for garnish)
