Keto Sausage Puffs

Prep time: 15 minutes | Cook time: 18–20 minutes | Yields: About 20 to 24 puffs

The Ingredients

  • 1 lb ground sausage (breakfast sausage or regular ground pork works great)

  • 1 ½ cups shredded cheddar cheese

  • 4 large eggs (coconut flour requires a lot of eggs for moisture!)

  • ⅓ cup coconut flour * ¼ cup (½ stick) unsalted butter, melted and slightly cooled

  • ½ teaspoon salt & ½ teaspoon black pepper (or more to taste)

Instructions

  1. Preheat & Prep: Preheat your oven to 375°F (190°C). Line a large baking sheet with parchment paper so the cheese doesn't stick to the pan.

  2. Brown the Sausage: As shown in the ingredient picture, you'll want to cook your sausage first! Heat a skillet over medium heat, add the ground sausage, and cook until completely browned and crumbled. Drain any excess grease and set it aside to cool slightly.

  3. Mix the Wet Ingredients: In a large mixing bowl, whisk together the 4 eggs, the melted (but not piping hot) butter, salt, and pepper.

  4. Add the Coconut Flour: Sprinkle the coconut flour into the egg mixture and whisk thoroughly. Important: Let the batter sit for about 3 to 5 minutes. Coconut flour is highly absorbent and needs a few minutes to soak up the liquids and thicken into a proper binder.

  5. Fold it Together: Once the batter has thickened, use a spatula to fold in your cooked, crumbled sausage and the shredded cheddar cheese. Mix until all the ingredients are evenly coated and clump together.

  6. Scoop the Puffs: Using a cookie scoop or a spoon, portion the mixture into roughly 1.5-inch balls and place them on your prepared baking sheet. Leave a little bit of space between each puff.

  7. Bake: Bake in the preheated oven for 18 to 20 minutes, or until the puffs are golden brown on the outside and firm to the touch.

  8. Serve: Let them cool on the baking sheet for just a couple of minutes before serving. They are fantastic warm!

Flavor Upgrades & Tips:

  • Spicy Puffs: Use "Hot" ground breakfast sausage and add a pinch of cayenne pepper or a dash of hot sauce to the egg mixture.

  • The "Cream Cheese" Secret: You might notice a little unlabeled bowl of white cream in the bottom right corner of the graphic! Serving these with a side of sour cream for dipping, or mixing 2 tablespoons of softened cream cheese directly into the batter, adds fantastic richness.

  • Meal Prep: These store wonderfully! Keep them in an airtight container in the fridge for up to 4 days and just pop them in the microwave or air fryer for a few seconds to reheat.
