The 4 Ingredients
2 cups mozzarella cheese, shredded (low-moisture part-skim works best)
2 oz cream cheese (about ¼ of a standard block)
1 large egg
½ cup almond flour (fine-blanched is best for texture)
Instructions
Preheat & Prep: Preheat your oven to 400°F (200°C). Prepare a baking sheet by lining it with parchment paper. This is non-negotiable—the cheese dough will stick to anything else!
Melt the Cheeses: In a large microwave-safe bowl, combine the shredded mozzarella and the cream cheese. Microwave in 30-second intervals, stirring in between, until the cheeses are completely melted and can be stirred into a smooth, uniform "blob."
Mix the Dough: Add the egg and the almond flour to the melted cheese mixture. Mix quickly with a spatula (or your hands once it’s cool enough to touch) until a soft dough forms.
Tip: If the cheese starts to harden before it's fully mixed, pop it back in the microwave for 15 seconds to soften it up again.
Roll it Out: Place the dough ball on the parchment paper. Place another piece of parchment paper on top and use a rolling pin (or your hands) to flatten the dough into a circle about ¼-inch thick.
The "Par-Bake" (Crucial for Crispy Crust): Remove the top layer of parchment. Use a fork to poke several holes across the surface of the dough to prevent air bubbles. Bake the plain crust for 8 to 10 minutes, or until it just starts to turn a light golden brown.
Top & Final Bake: Remove the crust from the oven. Add your favorite sugar-free pizza sauce, more cheese, and toppings (like the pepperoni shown in the photo).
Finish: Return the pizza to the oven and bake for another 5 to 7 minutes, until the cheese is bubbly and the edges of the crust are deep golden and crispy.
Pro-Tips for Success:
Season the Dough: While it’s only 4 ingredients, adding a teaspoon of garlic powder or Italian seasoning to the dough before rolling it out adds a huge boost of flavor.
Hand Handling: If the dough is too sticky to roll out, lightly oil your hands with olive oil or avocado oil.
Storage: This crust holds up great! You can make the crusts in advance, freeze them, and just top and bake them whenever you want a 5-minute pizza night.
